II. Vapor Heat Treatment System

In 2003, SEM received the concession from the Thai government in managing and operating the Vapor Heat Treatment (VHT) Factory of the Department of Agricultural Extension, Ministry of Agriculture and Cooperatives. Their own VHT facility was constructed in 2006, located in Ayutthaya province, which is one-hour drive from Bangkok. With this factory, they increase greatly their existing and future exporting market of fresh fruits to Japan, Korea, and New Zealand and raising the work efficiency and standard of quality control.

As per the Country Regulation of Korea and Japan, they require the mango for export to their countries must be treated by the VHT. This system, which SEM was already certified, must be approved and audited by the Korean and Japanese inspectors. Moreover, SEM has increased its VHT capacity to support the expansion of oversea markets.

II. Production Process

1. The fruit is selected and cut with the utmost care. Each team is supervised by an expert in selection and post-harvest handling of the fruit.

2. After putting the fruit in boxes, they are carefully cleaned, one by one, by hand and then put on the platforms for running off the latex so the mangoes will have no burn spots. This process takes a lot of time but is necessary to make good mangoes.

3. The fruit is transported to the packaging section, and fruits that meet the characteristics required for export to Japan are selected. Every fruit is manually cleaned to avoid the damage and pollution of the machines.

4. The fruit is dipped in hot water for 75 to 110 minutes, depending on the weight of the mango. Temperatures are monitored and recorded by a certified inspector system.

5. After heating in the hydrothermal, the fruit passes through a tub with cold water to cool down for a few hours. Then, it is the most important part of the selection of sizes and packing fruit. They have specific teams to determine on fruit sizes and quality.

6. The mangoes are blushed with white powder on their skin called Bloom. Bloom is a natural protection for keeping the fruit fresh. The products are inspected before shipping.
